An apartment big enough for all of us and our ideas
Ingredients: Meatballs
1 lb. hamburger
1/2 lb. ground pork or sausage
1/4 red pepper ( fine dice )
1/4 green pepper ( fine dice )
1/2 onion ( fine dice )
2 tbsp. oregano
1/2 teas. cracked pepper1 tbsp. salt
2 tbsp. crushed garlic
1/4 teas. fennel seed ( crushed )
1 cup Italian bread crumbs
1 egg
Method:
Combine all ingredients into a large mixing bowl and mix well, using your hands. Take about a golf ball size amount and roll into a ball. Place on a large cookie sheet. Repeat until done. Makes about 30 meatballs.
Place cookie sheet into a preheated 350 degree oven and bake for 30 minutes. remove from oven.
Ingredients: Sauce
1 28oz. can crushed tomatoes
1 28 oz. can whole tomatoes
1 6oz. can tomato paste
2 1/2 tbsp. oregano
3/4 teas. cracked pepper
1 teas. salt
1 1/4 tbsp. crushed garlic
1/4 teas. celery seed
3 teas. sugar ( to cut acid from the tomato paste )
2 1/2 cups water
2 bay leaves
1 tbsp. marjoram
1 onion small dice
Method:
Combine all ingredients in an 8 quart stock pot, stir well and bring to a boil. Reduce heat to a simmer and simmer for 1/2 an hour. Remove bay leaves.Add meatballs and simmer for another 1/2 hour.
Cook spaghetti noodles per instructions on bag or box. About a pound of dry noodles makes approx. 6 servings. If you like to mix your sauce with your noodles, now is the time. Pour a little sauce at a time because you will probably have some left over ( don't worry, you can freeze it for something else ).
If you like to pour the sauce over the noodles you can do that too. I like to put the sauce over the top so I can regulate how much sauce to use. This is great for those finicky eaters:-)
Sprinkle with parmesan cheese and grab a piece of garlic bread and your ready to go.
Bonus Recipe: Meatball sandwiches
Meatballs
French rolls
Mozzarella Cheese ( sliced or grated )
Method:
Open French roll into a "V" shape and sprinkle or place mozzarella cheese in bottom. Just enough to cover the bottom. Place "warm" meatballs into sandwich, about 3-4 meatballs with a little bit of sauce and cover with more cheese. Bake on a cookie sheet for about 15 minutes ( until cheese is melted ) in a preheated 400 degree oven.
Here's what they look like.
