Eggplant with Cheese Sauce

Eggplant with Cheese Sauce

Ingredients:
2 large eggplant (cut into 1/4 inch thick slices)
2 1/2 cups White sauce
3 1/2 cups Grated cheese
4 tbsps of olive oil
Directions:
1. Sprinkle the eggplant slices with salt and drain for 30 minutes. Rinse slices well and pat dry.
2. Heat oil on the skillet and cook the eggplant till golden brown. Remove the eggplant and set aside.
3. Preheat oven to 350 degrees.
4. Mix most of the grated cheese into the white sauce.
5. Arrange the eggplant in an oven safe dish, alternating with the white sauce. On your final layer of sauce, sprinkle with the remaining grated cheese.
6. Bake for 30-40 minutes till brown.

Oooo yummy. My grandma makes a similar dish with eggplant but we top it with ketchup instead of cheese. lol. 100% classy. =] Yours looks super good though.

Looks and sounds yummy! I'm going to try this soon. What goes into the white sauce?
